Barley--a cereal grain closely related to wheat--is thought to be the first cereal domesticated by humans. It is a member of the Triticeae family, which also includes wheat and rye. Barley is more nutritious and often less processed than either wheat or rice, and some studies suggest it’s nutritionally superior to other grains. Barley also has a lower fat content than most other grains.
