Ginseng Chicken Soup

Ingredients:

  • 1 whole chicken (about 3 lbs)
  • 10-15 ginseng roots
  • 30g dried Chinese yam
  • 10 jujube dates
  • 1/2 cup goji berries
  • 8 cups water
  • Salt and pepper to taste

Instructions:

  1. Rinse the chicken and remove any excess fat. Soak the ginseng roots in water for about 30 minutes to soften them.
  2. In a large pot, bring the water to a boil over high heat. Add the chicken, ginseng roots, dried Chinese yam, jujube dates, and goji berries.
  3. Bring the soup to a boil again, then reduce the heat to low and simmer for about 2 hours, or until the chicken is tender and fully cooked.
  4. Remove the chicken from the pot and transfer it to a cutting board. Let it cool slightly, then cut it into serving pieces.
  5. Strain the soup through a fine-mesh strainer into a clean pot. Discard the solids.
  6. Season the soup with salt and pepper to taste.
  7. Serve the chicken pieces with the hot ginseng soup, and enjoy the nourishing benefits of Chinese yam, jujube, and goji berries.
